Use a moving coil microphone! The chest straps seem to use the heartbeat to 
modulate a 5kHz (yes, kilohertz) carrier. Rather than use a mic (susceptible to 
interference) an audio transformer can be used. I guess Polar 
manufacture/license a suitable transducer but I don't know where you can get it 
(anyone else know?).
