I don't have any circuits to do this, but I know Maxim has some different video crosspoint switches that are serial controlled (i2c, i think, though i'm not sure if others are available), I've got a few different 8x8 ones here (samples), but haven't done anything with them yet, they're in QFP packaging, so I need to sort out a way to do prototyping with them (I know there are adapters available that you solder the surface mount ICs onto and they break it out into pins to use with a breadboard, not sure if this would be too good for video though...)
