As stated ni another response, you could do it, but I honestly prefer a bit more privacy than what the cordless phone internals provide. I suppose someone could roll their own crypto, but that still doesn't help the interference problems... Tone down the transmitter/receiver power? That would help if you're only looking for something around the house, but there are existing products already, so why bother hacking open a cordless phone? (Because we can, quite right :)...
