Add a BT829 to get the Y Cr Cb -signals from a composite-output on your SBC (data-sheet at http://www.conexant.com/Web/download/100132b.pdf?FileId=534) and your set. You can hook them up to I2C on the SBC (or simulated in parallel-port) and have just {Y, Cr, Cb, power, gnd, I2C-clock, I2C-data} going to the display. Youll need to add op-amps and maybe a bit of glue-logic on the display-side but it should still be fairly tiny and gives you color.
