Regarding text-only Kopin 320 driven by the Motorola chip,
there is BOB-3 by Decade Engineering:

Lets you take NTSC (or PAL ) signal from, say, a miniature camera
and superimpose 40 columns x 17 lines of text over it.

Can work without external video signal to produce text-only display.
