Gesture recognition is a bit easier than most computer vision issues; 
you know exactly what you're looking for; hand gestures. So the whole 
issue of edge/object detection is made easier. Hands are asymetric, so 
orientation determination should be easier (look for the thumb) 
especially if you have light intensity information.

I recommend picking up a computer vision book that goes over most of the 
common processing and algorithm approaches for computer vision as a 
starting point.

I forget where I saw it, but there is a search engine for 3D models that 
will try to match a 3D model to a given sketch. If you draw a boxy 2D 
car it will offer up 3D models of two wheeled vechicles. The reason I 
mention it is that the logic behind the 2D "shadow cast" to 3D matching 
could be useful for more fine grained gesture analysis.
