Entropic's Hidden Markov Toolkit is designed for speech recognition,
both dependent and independent.  It is arguably one of the best in the
business, coming out of the Cambridge UK program led by Steve Young.
It runs on Linux, HPUX, Solaris, SGI, and others.  It is open source
and real time.  They encourage you to port it to other platforms.
However, you have to pay for it (like $3k).
