Computer Shopper (back before it was exclusively ads) had a series
of articles years ago, on building a Hackintosh. It included schematics
for a custom video board that would interface with "normal" stuff from
the PC world...I think it outputted VGA compliant signals, or RGB. (Been
too long to remember details)
It was a series of articles...4 months, I think...and somewhere around
1988 or 1989. Even the right vintage for your Mac.

I seem to remember that Linux was ported to the 68000 series of
chips...should be possible.
