You could give Slackware 4.0 a try.
It's probably the Linux distro with the least bells and whistles.
(Note: The nest version is coming out soon, I'm writing this from a 6.5.0beta
version.)

Another form of Linux which you would probably like is muLinux, which
fits on a single floppy, but has much functionality anyway.
It can also re-build itself, so it's very easy to make a custom disk.
