I don't know if this is what you are looking for, but here are some construction plans for noise-cancling headphones using a pair of microphones and some op-amps. You can probably use a similar arangement to make a noise-cancelling microphones. http://headwize.com/projects/noise_prj.htm A non-electronic solution would be to use a microphone which has its diaphram open to both sides.
